What’s your favorite thing to cook?

Wow, what a question! Depends on many variables! After work day-leftovers or a healthy bowl of something I can zap in the microwave. I used to feel guilty about it, but I have thrown the guilt out the window! Every day with MS is different, and as anyone with a chronic illness will tell you, we have x number of spoons of energy for the day, and there are no leftovers.

On the weekend though, when I have time, gosh , I love to cook a prime rib with all the trimmings, or turkey and stuffing and all the veggies, or put together a lasagna from scratch, and in the summer I have perfected bbqd homemade burgers of any meat type. I try to use the weekend to cook a main meat meal and freeze half and use through the week, which if done regularly gives a nice cycle of meals.

Smoothies! Vanilla oat milk, peanut butter, banana, kale (from the freezer), prune juice (you don’t taste it) and..chocolate oat milk. The great thing about “The Magic Bullet” or any great blender is anything goes in a smoothie!

As a single female human, cooking has to be creative to stay in the budget. And open to new ideas! “Mindful Mom” has great simple recipes for the latest gadget the “Instant Pot”, tasty!

Meatloaf! With beef, pork, veal, or ground whatever, add some oatmeal, fave bbq sauce or ketchup, spices as desired.

Shepherds pie with leftover roast of any meat ground with grandma’s meat grinder. Any vegetables I have a hankering for and mashed potatoes on top. Gravy is an option.

So the low fat, meat free, vegan food, honestly I try, that’s when I go and get the frozen, healthy food bowls that have all that in them !
